Mushroom Beef Stroganoff


1/2 K beef (I used chuck)
salt to taste
1 medium onion
6-8 mushrooms
2 T butter
2 T flour
1      g Sour Cream
2 1/2-3 cups Milk
1 pkg Noodles (any kind you like)
Salt and Pepper to even beef bullion to taste

Put water on to boil the noodles. (Some Expats use their filtered water to boil noodles, I haven't had any issues and just use the tap water for cooking noodles). Cut the beef into bite size pieces and salt to your liking. Slice onions and mushrooms. Brown meat with sliced onions.  Just before the meat is completely done add the sliced mushrooms, stir occasionally. Add noodles to boiling water and stir. Drain the fat from the meat. Mix the flour with the sour cream then when the meat is just cooked (don't want to over cook the meat) add the sour cream mixture and stir while pouring all of the milk (I have never measured the milk, I just add enough to make the amount of sauce that I want).  Once it is mixed let it sit a while on low heat and stir again when it starts to thicken. Remove from heat when at desired thickness. Add salt and pepper to taste, could also season with beef bullion.  Drain noodles and serve. Enjoy!

Spaghetti Sauce




1/2 K Hamburger
1 small onion
1 Tbsp garlic powder
5-10 mushrooms
1 green pepper
Tomato Juice
Tomato Paste
Parsley
Orangano
Brown hamburger with onion and garlic. When almost completely browned push to side and saute mushrooms and green pepper. Add sauce. let simmer 10 minutes. Add seasoning to taste. (if too bitter add 1 Tbsp sugar)

No Crust Quiche






8 slices bacon
1/2 c. cheese, shredded
2 T. butter, melted
4 eggs, beaten
1/4 c finely chopped onion
1 tsp salt
1/2 c. flour
1 1/2 c. miilk

Optional:
mushrooms
spinach
broccolli
ham

1. Cook bacon, crumble
2. Preheat oven to 350 degrees. Lightly grease 9" pie pan
3. :ine bottom of pie plate with cheese and bacon. Combine eggs, butter, onion, salt, flour and milk in seperate bowl, whisk until smooth, pour into pan.
4. Bake for 35 minutes, until set. Serve hot or cold.

Taco Meat Mix




Brown 1/2 K ground beed, drain grease. Add:
1 c. tomato juice
1 tsp chili powder
1/2 tsp garlic powder
3/4 tsp salt

Let simmer for 5-10 minutes.  To make Tacos simply put meat in Lavash and add whatever toppings you like, i.e. lettuce, cheese, sour cream, tomatoes, onions, salsa, etc.  

Italian Dressing Mix




Powder mixture:
1 Tbsp garlic salt
1 Tbsp onion powder
1 Tbsp sugar
1 tsp ground black pepper
1/4 tsp celery salt
2 Tbsp salt (opt)

Leaf mixture:
2 Tbsp dried oregano
1/4 tsp dried Thyme
1 tsp dried basil
1 Tbsp parsley

Mix and store seperatly in air tight containers.

To prepare: whisk together
1/4 c. white vinegar
2/3 c. canola oil
2 T water
1 T powder mix
1 Tbsp leaves mix.

Ranch




1 tsp dried parsley
1/4 tsp pepper (or less)
1 tsp (or 1/2 tsp) seasoned salt
1/2 tsp garlic powder
1/4 tsp onion powder
1/8 tsp Thyme

Dressing: 1 c. mayo and 1 c. butter milk
Dip: 1 3/4 c. sourcream 1/2 buttermilk

Maple Syrup




4 c. sugar
1/2 c. light brown sugar
2 c. water
1 tsp. vanilla
1 tsp maple flavoring

Mix water and sugars and cover with lid. Bring to a boil (Don't open lid- you have to listen!) then lower heat and boil gently for 10 minutes. Remove from heat, cool for 1 hour. Add vanilla and maple flavoring, stir to mix. Pour into container and refrigerate or leave out.
